I've been sharing healthy recipes that my family enjoys on my Facebook Page: Nabielec Fitness, and though it would make sense to have them all in one place.  I hope that this makes it easier for you to find something you'll feel good about serving your family as well as eating yourself. No-Noodle Butternut Squash & Sausage Lasagna

bns-portionLasagna may be one of my favorite foods!  But all that cheese, and pork sausage and noodles make it something that I only eat once maybe twice a year.  This modified version uses chicken sausage instead of regular pork Italian sausage, butternut squash instead of noodles and cottage cheese replaces much of the mozzarella and gives it a fantastic texture with fewer calories!  Recipe

Butternut Squash Mac and Cheese

This recipes let's me get my fix without feeling guilty about it. The key is to use strong cheeses so that you don't have to use a lot to get a fantastic cheesy flavor.  The squash gets pureed to give the dish that creamy texture you would expect from mac & cheese but without the butter.  Recipe.

Slow Cooker Enchilada Quinoa Bake

Whether it's a freezing winter day or a hot summer day, I love using the crockpot to make dinner.  The flexibility of being able to walk away from the kitchen while your dinner is cooking is a life saver for busy SAHMs chasing toddlers, running around doing school and activity pick-ups and drop-offs, or trying to survive the newborn sleep deprivation haze.  Recipe.

These are a house favorite!  The girls love them, I love them, my husband loves them.  I'm sure if the dog ever got ahold of one he'd love them too!  Not only do we all love eating them, they are simple enough that you can have your kids help you make them.  I prefer to make these as mini muffins vs a standard size and I cook them for about 10 minutes or until the tops are golden.
